Enamel pans are all-rounders amongst pans with long life and very popular with cooking enthusiasts. They are suitable for all fried dishes from fast browning to slow braising. The heat is retained evenly throughout the pan in both the base and sides and is so good that the heat can be turned down quickly.
The pan base is always slightly curved inwards, as it expands after heating and then rests flat on the hob. Glass and iron expand differently with enamel (= glass on iron). It is therefore important to start the roasting process at a medium and not the highest heat and then turn up the heat. This allows both materials to expand evenly.
